2 medium apricots
2 teaspoons sherry
for the topping:
1 oz (30 g) curd cheese
2 tablespoons low-fat natural yogurt
1 1/2 teaspoons caster sugar
few drops of almond essence
1. Cut the apricots in half, remove the stones and roughly chop the flesh. Place in a ramekin and sprinkle with sherry.
2. Beat the curd cheese, yogurt, 1/2 teaspoon sugar and a few drops of almond essence together.
3. Spoon the topping over the fruit and sprinkle the remaining sugar evenly over the top.
4. Place the ramekin under a preheated grill for a few minutes until golden and bubbling. Serve warm or chilled.
