Wheat Free Apple and Blackberry Crumble

Wheat and Dairy free

ingredients

serves 6
4 large cooking apples
4 tablespoons of sugar
1 teaspoon of Gluten free mixed (pie) spice
The juice of 1/2 a lemon
500 g (17 oz) 3 1/2 cups of fresh or frozen blackberries
1 teaspoon of Dairy free margarine

for the crumble

115 g (4 oz) 1/2 cup of Dairy free margarine
55 g (2 oz) 1/3 cup of sugar
55 g (2 oz) 1/2 cup of oats
100 g (3 1/2 oz) 2/3 cup of rice flour
55 g (2 oz) 1/2 cup of millet flakes
1 teaspoon of ground cinnamon
Deep-sided 30 cm (12 inch) ovenproof dish

method

1. Preheat the oven to 180°C (350°F) gas 4

2. Peel and core the apples and slice finely.

3. Place in a saucepan with the sugar, mixed (pie) spice and lemon juice and cook gently until soft.

4. Add the blackberries and remove from the heat.

5. Dot with margarine.

to make the crumble

1. Using the food processor by mixing the margarine with the sugar for a few seconds.

2. Add the oats, rice, flour, millet flakes and cinnamon and whiz briefly together.

3. Put the apple mixture into the ovenproof dish, cover with the crumble and bake in the centre of the oven for 25 minutes, or until golden and bubbling.
