250 g dried pasta penne
100 g butter
4 garlic cloves, peeled and slivered
25 g walnut pieces, finely chopped
25 g pitted black olives, finely chopped
250 g kale, stalks removed, finely shredded, blanched and refreshed
2 tsp balsamic vinegar
salt and freshly ground black pepper
fresh parmesan shavings
1. Cook the pasta as per pack instructions.
2. In the meantime melt the butter in a large frying pan or wok.
3. Add the garlic, walnuts and olives and cook over a moderate heat for 1-2 minutes.
4. Then add the kale, drained pasta, balsamic vinegar, salt and freshly ground black pepper and cook for a further 1 - 2 minutes.
Pile onto individual plates and top with parmesan shavings.
