2 tbsp oil
4 boneless, skinless chicken breasts, sliced
1 red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
1 red onion, peeled and sliced
500 g pack fajita dinner kit
1 avocado, peeled, stone removed and diced
1 red onion, peeled and chopped
2 red peppers, deseeded and chopped
2 tomatoes, chopped
15 g pack coriander, roughly chopped
juice of 2 limes
90 g jalapeno chillies, sliced
1. For the fajitas: heat the oil in a large frying pan and pan-fry the chicken with the peppers and onion.
2. Toss in the fajita seasoning mix from the fajita dinner kit according to pack instructions.
3. For the salad: Mix all the ingredients together and squeeze over the lime juice.
4. To serve, spoon the chicken into the wraps and serve hot with the thick and chunky salsa from the fajita dinner kit, the salad and the jalapeno chillies.
