Endive and Roquefort

ingredients

serves: 6
4 slices white bread
4 tbsp oil for frying
1 curly endive or frise
2 heads radicchio
125 g Roquefort cheese, crumbled
125 ml french dressing
2 tbsp mayonnaise
1 small clove garlic, crushed
1 tsp chopped basil
salt and freshly ground black pepper to taste

method

1. First, combine all the ingredients for the garlic mayonnaise.

2. Cut the bread into heart shapes, using a metal cutter. Heat the oil in a pan, add the bread and fry until golden brown. Drain on kitchen paper.

3. Tear the endive into pieces and separate the radicchio into leaves. Place in a bowl. Stir in the cheese and dressing. Spoon onto a serving plate.

4. Spread the croutons with the mayonnaise and arrange around the edge of the salad. Serve immediately.
