Italian Bean Salad

ingredients

serves: 6 - 8
1 cup dried Lima beans
salt
3 medium-sized potatoes, cooked and sliced
1 cup chopped celery, blanched
freshly ground pepper
1/4 cup Mayonnaise
lettuce leaves
2 hard-boiled eggs, sliced
1/2 cup cocktail onions
3 tablespoons snipped chives

salad dressing

1 teaspoon paprika
pinch salt
pinch sugar
1/4 teaspoon dry mustard
2 tablespoons vinegar
4 tablespoons olive oil

method

1. Wash beans well, cover well with cold water and bring slowly to the boil.

2. Simmer for 1 1/2 hours.

3. Add 2 teaspoons salt and cook further 30 minutes until tender. Drain.

4. Combine beans, potato and celery.

5. Pour over salad dressing, toss lightly and chill for 2 hours in refrigerator.

6. Add salt and pepper to taste and mix in mayonnaise.

7. Line a salad bowl with crisp lettuce leaves and fill with bean salad.

8. Garnish with sliced hard-boiled eggs and sprinkle with cocktail onions and chives.

1. Place all ingredients in a screw top jar, seal and shake well.

2. Let it stand until required and shake just before using.
