1. Top and tail beans, string only if necessary.
2. Leave whole or slice French-style by splitting down centre.
3. Cook in a small quantity of boiling, salted water with a pinch of sugar added. Do not cover.
4. When tender, drain, place in a vegetable dish and keep hot.
5. Melt butter in a small pan, add almonds and saute until golden brown.
6. Pour butter and almonds over beans, season with pepper and serve immediately.
