Lemon and goats cheese syllabub

ingredients

175 ml (6 fl oz) double cream
30 g (1 oz) goats' cheese, mashed
1 lemon, zest of whole and juice of ½ only
1 tbsp honey
slice of lemon, to garnish
fresh sprig of mint, to garnish

method

1. Place the cream in a large bowl and using an electric whisk, beat until thickened. Add the goats' cheese to the cream and mix to combine.

2. Add the lemon zest, honey and lemon juice to the bowl and mix together until combined.

3. Spoon the mixture into a serving dish or glass and garnish with the lemon slice.

4. Finish by garnishing with the mint to serve.
