350 g (12 oz) large button mushrooms, quartered
2 garlic cloves, crushed
low fat cooking spray
150 ml (5 fl oz) vegetable stock
290 g can of 99% fat free condensed mushroom soup
2 tablespoons half fat creme fraiche
4 medium slices of wholemeal bread
salt and freshly ground black pepper
1 tablespoon chopped fresh parsley, to garnish
1. Place the mushrooms and garlic in a pan, spray with low fat cooking spray and cook them gently for 5 minutes.
2. Add the stock and seasoning, and cook over a high heat for 5 minutes. Stir in the soup and heat through.
3. Add the creme fraTche and stir well. Remove from the heat.Toast the bread.
4. Top the four slices of toast with the mixture. Scatter over the parsley and serve.
