Minced Lamb Kebabs

Calories per serving 280

ingredients

serves 2
200 g (7 oz) lamb mince
1 garlic clove, chopped
1 tablespoon tomato puree
1/2 teaspoon cumin seeds
1/2 red pepper, de-seeded and diced very finely
1 small egg, beaten
25 g (1 oz) fresh white breadcrumbs
1 tablespoon chopped fresh coriander
salt and freshly ground black pepper

for the dip

scant 1/2 (us) cup (100 ml) low fat plain yogurt
1 tablespoon chopped fresh coriander
finely grated zest of 1/2 lemon

method

1. Place the lamb mince in a mixing bowl with the garlic, tomato puree, cumin seeds, red pepper; egg, breadcrumbs, fresh coriander and seasoning. Using clean hands, mix everything together thoroughly and then shape the mixture into eight small meatballs.

2. Take two skewers and thread four meatballs on to each. Grill the kebabs under a medium heat for 10 minutes. Turn them regularly, until they are evenly browned and cooked through.

3. For the dip, whisk together the yogurt, coriander and lemon zest. Spoon the dip into a small bowl, then cover and chill until required.

4. Drizzle the dip over the cooked meatballs and serve.

try this; This mixture also makes a superb burger, just shape the mince mixture into two round flat burgers and grill them for 5 minutes on each side. Serve the dip as a tasty relish.
