500 g (1 lb) minced steak
1 medium onion, finely chopped
1/2 cup soft breadcrumbs
1 teaspoon grated orange rind
1 egg, lightly beaten
1/4 teaspoon dried sage
salt and pepper
1 tablespoon butter
1 tablespoon oil
4-5 processed Cheddar cheese slices
halved hamburger buns or thickly sliced bread
crisp lettuce leaves
1 small orange
mint sprigs
method
1. Combine steak, onion, breadcrumbs, orange rind, egg, sage and season to taste with salt and pepper. Mix well.
2. Shape into 4 or 5 even-sized patties and fry gently in combined butter and oil until cooked.
3. Remove and drain on paper towels.
4. Top each hamburger with a cheese slice and grill until cheese melts.
5. Toast buns or bread and spread with butter.
6. Cover with crisp lettuce and a hamburger on each.
7. Slice orange with peel, cut halfway through 4 or 5 slices, twist and place on top of cheese.
8. Garnish with mint sprigs and serve.
