Lemon and Herb Stuffing

ingredients

sufficient for 8 x 75 g (3 oz) thin fish fillets
2 oz (50 g) margarine
2 cups (4 oz) 120g fresh white breadcrumbs
2 tbsp (30 ml) chopped parsley
2.5 ml (1/2 tsp) chopped fresh thyme
grated rind of 1/2 lemon
salt and pepper

method

1. Melt the margarine in a small saucepan. Add the breadcrumbs, herbs and lemon rind.

2. Add salt and pepper to taste, then use as required.
