Fruited tea loaf

100 g (3 1/2 oz) All Bran
125 g (4 1/2 oz) caster sugar
1 teaspoon ground mixed spice
225 g (8 oz) mixed dried fruit
300 ml (10 fl oz) skimmed milk
125 g (4 1/2 oz) courgettes, grated
100 g (3 1/2 oz) self raising white flour

method

1. Preheat the oven to Gas Mark 4/180°C/fan oven 160°C.

2. Line a 700 g (1 lb 9 oz) loaf tin with baking parchment.

3. Place the All Bran, sugar mixed spice, and dried fruit into a mixing bowl and stir thoroughly.

4. Stir in the milk and leave the mixture to stand for 30 minutes.

5. Stir in the courgettes and sift in the flour Mix well and then spoon the mixture into the loaf tin, and level the surface with the back of a spoon.

6. Bake for 1 hour or until a skewer inserted into the centre comes out clean.

7. Transfer the loaf to a cooling rack and allow it to cool before cutting it into slices.
