Low Fat Caesar salad

Calories per serving 260.

ingredients

serves 2.
1 thick slice of white bread, cubed
low fat cooking spray
2 eggs
25 g (1 oz) canned anchovy fillets, drained to remove excess oil
200 g bag of mixed lettuce leaves
25 g (1 oz) Parmesan cheese, shaved
3 tablespoons low fat Caesar style dressing
freshly ground black pepper

method

1. Preheat the oven to Gas Mark 4/180°C/fan oven 160°C.

2. Arrange the bread cubes on a baking sheet. Spray them lightly with low fat cooking spray and bake them for 12 - 15 minutes until they are golden and crunchy croutons.

3. Meanwhile, cook the eggs in boiling water for 8 minutes, until they are hard boiled.

4. When they are cooked, run them under cold water to prevent a black ring forming around the yolk.

5. When cooled, peel off the shells and cut the eggs into quarters.

6. Pat the anchovies with kitchen paper to absorb any excess oil.

7. Chop them into small pieces and mix them together with the mixed leaves and Parmesan cheese shavings in a salad bowl.

8. Top the salad with the egg quarters and crunchy croutons.

9. Drizzle the dressing over the top and season with freshly ground black pepper
