ingredients

serves 4
175 g (6 oz) bulb of fennel, shredded
225 g (8 oz) carrots, grated coarsely
100 g (3 1/2 oz) radishes, sliced thinly
4 tablespoons fat free vinaigrette
1 tablespoon finely chopped fresh chives, to garnish

method

1. Place the fennel, carrots, radishes and vinaigrette in a large bowl, and mix together thoroughly.

2. Pile the salad into a serving dish and scatter with the chives.
