Cod and pancetta kebabs

Pancetta is an Italian cured ham that is generally sold sliced very thinly

ingredients

serves 4
450 g (1 lb) skinless, boneless cod fillet
100 g (3 1/2 oz) pancetta
350 g (12 oz) shallots
225 g (8 oz) cherry tomatoes
8 bay leaves
low fat cooking spray

method

1. Cut the cod into bite sized cubes and wrap a piece of pancetta around each cube.

2. Thread the wrapped fish pieces on to four skewers, alternating them with the shallots, cherry tomatoes and bay leaves.

3. Spray each kebab with low fat cooking spray and grill for 10 minutes, under a medium heat, turning frequently until the fish is cooked through.
