Slow cooked chicken with mushrooms

Calories per serving 200.

ingredients

serves 4.
low fat cooking spray
1 onion, chopped
2 garlic cloves, crushed
4 x 75 g (2 3/4 oz) skinless, boneless chicken thighs
4 x 75 g (2 3/4 oz) chicken drumsticks, skinned
400 g can of chopped tomatoes
1 tablespoon balsamic vinegar
300 ml (10 fl oz) chicken stock
350 g (12 oz) open cup mushrooms
salt and freshly ground black pepper
2 tablespoons torn fresh basil, to serve

method

1. Heat a large, heavy based saucepan and spray it with low fat cooking spray.

2. Add the onion, garlic and chicken portions.

3. Cook for 5 minutes, turning the chicken portions, so that they are evenly browned all over.

4. Add the chopped tomatoes, balsamic vinegar chicken stock, whole mushrooms and seasoning and bring to the boil.

5. Reduce the heat, cover and simmer for 1 1/2 hours, by which time the chicken should be very tender

6. Scatter with the basil before serving.
