Luscious lemon fairy cakes

Calories per serving 105.

ingredients

mokes 9 cokes.
75 g (2 3/4 oz) self raising white flour
50 g (1 3/4 oz) polyunsaturated margarine
50 g (1 3/4 oz) caster sugar
1 egg, beaten
finely grated zest of 1 lemon
1 tablespoon fresh lemon juice

for the topping

1 tablespoon lemon curd
1 tablespoon boiling water

method

1. Preheat the oven to Gas Mark 5/190°C/fan oven 170°C. Line a 9 hole bun tin with paper cases.

2. Sift the flour into a bowl. In a separate mixing bowl beat the margarine and caster sugar together until you have a pale and fluffy mixture. Add the beaten egg, lemon zest and lemon juice with 1 tablespoon of the flour and mix well.

3. Add the remaining flour to the lemon mixture and fold it in thoroughly. Divide the mixture between the paper cases and bake for 15 minutes, until the sponges are springy to the touch.

4. While the cakes are still warm, mix the lemon curd with the boiling water and brush this over the surface of the cakes. Allow them to cool before serving.

I feel that the recipe itself is good,, as it says the time to make [[ i.e preparations and the cooking time]], also it has the amount of cakes it makes.. Thanks cookitsimply for helping me make lovely cakes. <3 btw,, plz write back if uve got any hot guys that help create the recipes lol..x

Excellent easy straight forward receipe,
im really new to baking &have taken it up to spent a bit of time with my children as there 10 &15yr olds so this is something new were enjoying doing together.thats as long as i dont tell their friends their baking with me cos that would be soooooo uncool.haha.

There was so little mixture for 9 cakes, I didn't think that it would be right. And it wasn't.

I have made 9 of the smallest micro cakes in the world today. They were meant for Halloween and now what do I do?

I expect that they will taste ok, but the amounts given are incorrect.

Thanks! the cakes were gorgeous, however i agree with JC on the point that there were hardly any cakes / cakes that were too small, so i doubled up the mixture.
