Spaghetti Springtime

ingredients

serves: 2 - 4
250 g (8 oz) spaghetti
1 1/2 cups chopped, peeled tomatoes
1 green capsicum, seeded and chopped
1/2 cup chopped spring onions
1/4 cup chopped black olives
salt and pepper
1 tablespoon lemon juice
1/3 cup olive oil
chopped parsley for garnish
grated Parmesan cheese for serving

method

1. Cook spaghetti in boiling, salted water until just tender, drain and keep hot.

2. Heat tomatoes in saucepan. Stir until hot.

3. Add hot spaghetti, green capsicum, spring onions, olives, salt and freshly ground pepper to taste and lemon juice.

4. Finally add olive oil and toss well.

5. Garnish with chopped parsley and serve immediately with Parmesan cheese.
