Chocolate cherry brownies

Calories per serving 225.

ingredients

makes 12 brownies.
175 g (6 oz) self raising white flour
50 g (1 3/4 oz) cocoa powder
100 g (3 1/2 oz) soft dark brown sugar
100 g (3 1/2 oz) polyunsaturated margarine, melted
1 egg
175 ml (6 fl oz) skimmed milk
1 teaspoon almond essence
150 g (5 1/2 oz) canned cherries, drained and stoned
25 g (1 oz) milk chocolate chips

method

1. Preheat the oven to Gas Mark 4/180°C/fan oven 160°C. Line a 20 cm (8 inch) square tin with non stick baking parchment

2. Sift the flour and cocoa powder into a mixing bowl and stir in the sugar

3. Pour the margarine over the dry ingredients along with the egg, milk and almond essence, and mix to a soft batter Fold in the cherries and chocolate chips.

4. Pour the mixture into the prepared tin and bake for 25 minutes.

5. Allow it to cool in the tin for 15 minutes and then carefully transfer it to a wire rack to cool completely.

6. Cut it into 12 brownies.

They are quite acceptable for a low calorie alternative for a brownie, but they are not squidgy or gooey which is so nice about full fat ones.

I made these today & they're very tasty & ok, not as squidgy as normal brownies but a good replacement. I put half the amount of sugar in & replaced the marg with same amount of apple sauce. light, moist & delicious : )
