Grilled pork steaks with apple mash

serves 4
4 x 125 g (4 1/2 oz) boneless pork loin steaks
2 teaspoons clear honey
1 garlic clove, crushed
2 tablespoons soy sauce
1 tablespoon tomato puree
450 g (1 lb) potatoes, peeled and diced
225 g (8 oz) cooking apple, peeled, cored and diced
25 g (1 oz) low fat spread
6 spring onions, sliced
salt and freshly ground black pepper


1. Score a criss cross pattern along the top of each pork steak and place them in a shallow dish.

2. Mix together the honey, garlic, soy sauce and tomato puree and brush this mixture over the steaks.

3. Cover and leave to marinate for 20 minutes.

4. Meanwhile, cook the potatoes in lightly salted, boiling water for 15 minutes, and then add the apple to the pan.

5. Cook for a further 5 minutes. Drain well and mash the apple and potatoes together Season to taste.

6. Grill the pork steaks under a medium to low heat for 5 minutes on each side.

7. Melt the low fat spread in a small saucepan and add the spring onions.

8. Cook for 2 minutes to soften them, and then spoon them into the mash and mix well.

9. Divide the mash between four serving plates and top with a cooked pork steak.

Very nice healthy dish

Tasty dish, lots of portions of fruit and veg (I added Fine Beans on the side) and low in fat. Maybe the tang of the aples in the mash slightly over powered the taste of the pork but I added garlic salt to soften it. Would also consider using the marinade as a sauce intstead. Overall, really tasty and healthy.
