Chargrilled beefburgers

225 g (8 oz) extra lean beef mince
1 teaspoon wholegrain mustard
25 g (1 oz) pickled gherkins, chopped finely
1 small egg, beaten
25 g (1 oz) fresh white breadcrumbs
low fat cooking spray
salt and freshly ground black pepper

to serve

2 burger buns, split
salad leaves, shredded

method

1. Place the mince in a mixing bowl and break it up with your hands. Add the mustard, gherkins, egg, breadcrumbs and seasoning, and mix thoroughly. Using your hands, shape the mixture into two round, flat burgers.

2. Preheat a griddle pan and spray it with low fat cooking spray. When the pan is hot add the burgers and cook them for 5 minutes on each side, or cook them under a hot grill for the same amount of time.

3. Place each beefburger in a bun with some shredded salad leaves and serve at once.
