Russian Oysters

ingredients

12 oysters in the shell
3 tablespoons finely chopped onion or chives
1 hard-boiled egg
1 x 56 g (2 oz) jar black caviare

method

1. Oysters must be absolutely fresh.

2. Arrange oysters on a bed of ice.

3. Sprinkle with chopped onion or chives.

4. Separate egg white from egg yolk.

5. Finely chop egg white, sieve egg yolk and sprinkle both over oysters.

6. Top oysters with black caviare and serve immediately.

HI, MANY YEARS AGO - AROUND LATE 1960'S I WENT TO RESTAURANT IN ST. KILDA MELBOURNE AUSTRALIA WHERE I HAD THIS. I WAS MAD ON OYSTERS AND CURIOUS AS TO WHAT IT COULD BE. IT WAS OYSTERS NATURAL - TOPPED WITH SPRINKLED HARD BOILED EGG, CHIVES, A LARGE DOLLOP OF SOUR CREAM, AND CAVIAR. I HAVE NEVER FORGOTTON IT - ABSOLUTELY AMAZING. LUCIA ALEXANDER
