Sandwich Holstein

ingredients

butter
4 slices bread cut from a round white (barrel) loaf
100 g (4 oz) mature cheese, sliced
2 eggs
25 g (1 oz) anchovies
16 capers

method

1. Butter the slices of bread and make into sandwiches with the cheese.

2. Melt 25 g (1 oz) butter in a frying pan and fry the sandwiches, turning once, until crisp and golden.

3. Meanwhile fry the eggs.

4. Cut anchovies in half lengthwise.

5. Remove sandwiches from pan and top each with a fried egg.

6. Arrange a lattice of anchovies over the eggs and garnish with capers.

7. Serve at once.
