Cheese and Smoked Herring Flan

ingredients

serves 4 - 5
4 oz (100 g) short crust pastry
2 eggs
2/3 cup (150 ml) 1/4 pt milk
4 oz (100 g) cheese, grated
8 oz (225 g) Smoked Herring fillets, flaked
pepper

method

1. Roll out the dough and use to line a 20 cm/8 inch flan tin.

2. Beat together the eggs and milk, then mix in the cheese, Smoked Herring and pepper.

3. Pour into the flan case and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 45 minutes or until the filling is set and golden brown.

4. Serve hot or cold.
