ingredients

serves 4 - 5
2 tablespoons oil
1 lb (450 g) frying steak (preferably rump or fillet), cut into short thin strips
2 celery stalks, thinly sliced
1 small carrot, thinly sliced
1 spinach or green cabbage leaf, shredded
2 spring onions, finely chopped
1 tablespoon soy sauce
1 teaspoon curry powder
salt
pepper
200 ml (1/3 pint) water

method

1. Heat the oil in a heavy-based frying pan.

2. Add the steak strips and brown quickly.

3. Add the remaining ingredients and stir fry until the vegetables are just tender.

4. Serve with boiled or fried rice.
