Provencal Beans

ingredients

serves 4
2 tbsp (25 g) 1 oz butter
2 tablespoons oil
2 onions, thinly sliced
2 garlic cloves, crushed
350 g (12 oz) tomatoes, skinned and sliced
1 lb (450 g) French or runner beans
1 teaspoon dried marjoram or mixed herbs
salt pepper
4 oz (100 g) Cheddar cheese, grated

method

1. Melt the butter with the oil in a saucepan and fry the onions until softened.

2. Add the garlic and tomatoes and cook for a further 2 to 3 minutes, then stir in the beans, herbs, salt and pepper.

3. Cover and simmer very gently until the beans are tender.

4. Turn into a flameproof serving dish and sprinkle over the cheese.

5. Brown quickly under the grill.
