Spanish Omelette

ingredients

serves 1
2 tablespoons oil
2 small potatoes, peeled and diced
1 small onion, finely chopped
3 eggs, beaten salt
pepper

method

1. Heat the oil in a frying pan and fry the potatoes and onion gently until they are cooked and tender, but not brown.

2. Beat the eggs with salt and pepper and pour into the pan.

3. Cook until the bottom of the omelette is set, then turn oven and cook the other side. (This can be done by reversing the omelette onto a plate and sliding it back into the pan.)

4. Alternatively, cook the top under the grill.
