Shearing Cake

ingredients

2 cups (225 g) 8 oz flour
1 teaspoon baking powder
pinch of grated nutmeg
1 stick (8 Tbsp) 4 oz (100 g) butter
3/4 cup (175 g) 6 oz sugar
grated rind of 1/2 lemon
2 teaspoons caraway seeds
2/3 cup (150 ml) 1/4 pt milk
1 egg, beaten

method

1. Sift the flour, baking powder and nutmeg into a bowl.

2. Rub in the butter, then stir in the sugar, lemon rind and caraway seeds. Bind with the milk and egg.

3. Turn into a greased 18 cm (7 inch) cake tin lined with greased greaseproof paper.

4. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 1 hour.
