1 kg (2 lb) potatoes, peeled, cooked and mashed
3 Tbsp (40 g) butter or 3 tablespoons double cream (heavy cream)
salt and pepper
1/2 teaspoon dried sage
1 onion, parboiled and finely chopped
4.5 kg (10 lb) goose (approx.)
1. Mix the potatoes with the butter or cream, salt, pepper, sage and onion.
2. Use to stuff the goose and truss.
3. Place in a roasting tin, sprinkle with flour and roast as in the previous recipe.
