Rabbit and Sausage Hot Pot

ingredients

serves 4 - 5
350 g (12 oz) sausage meat
1 rabbit or chicken, jointed
1 large onion, chopped
salt and pepper
stock
3 oz (75 g) fresh breadcrumbs
2 tbsp (25 g) 1 oz butter

method

1. Spread half the sausage meat on the bottom of a pie dish.

2. Place the rabbit or chicken joints on top and sprinkle them with the onion, salt and pepper.

3. Cover with the rest of the sausage meat. Half fill the dish with stock.

4. Sprinkle the breadcrumbs over the top and press them down firmly.

5. Dot with the butter. Cover the dish with foil and bake in a preheated cool oven 150°C (300°F) Gas Mark 2 for 1 1/2 hours.

6. Fifteen minutes before the cooking time is up, remove the foil so that the top can brown.
