Gazpacho is a traditional chilled Spanish soup.
1 medium cucumber
1 lb (450 g) fully ripened tomatoes
4 oz (100 g) green pepper, seeded
50 - 100 g (2 - 4 oz) onions, skinned
1 clove garlic, skinned
3 tbsp (60 ml) oil
3 tbsp (60 ml) wine vinegar
425 g (15 oz) can tomato juice
30 ml (2 level tbsp) tomato paste
1/4 level tsp (1.25 ml) salt
1. Wash and roughly chop the cucumber, tomatoes, pepper, onion and garlic.
2. Mix all the ingredients together in a basin. puree them in an electric blender in small portions.
3. Return the puree to the bowl and add a few ice cubes.
4. Serve the soup with very finely diced green pepper, and croutons.
