Potatoes and Onions au Gratin

ingredients

serves 4 - 6
8 oz (225 g) potatoes, peeled and diced
salt
1 lb (450 g) button onions
450 ml (3/4 pint) white sauce
pepper
25 g (1 oz) cheese, grated

method

1. Cook the potatoes in boiling salted water until just tender.

2. Meanwhile, cook the onions in another pan of boiling salted water until tender.

3. Heat the white sauce and season well with salt and pepper.

4. Drain the potatoes and onions and fold into the sauce.

5. Turn into a baking dish and sprinkle over the cheese.

6. Bake in a preheated moderately hot oven 200°C (400°F) Gas mark 6 for about 20 minutes.

7. Serve with any roast joint, grill or casserole.
