Crofter's Savoury Roll

ingredients

serves 4
225 to 350 g (8 to 12 oz) cooked meat (brisket of beef is very good)
1 bacon rasher, rinded
1 small onion
pinch of dried mixed herbs
salt
pepper
4 oz (100 g) fresh breadcrumbs
stock or gravy to bind

method

1. Mince the meat, bacon and onion and mix together with the herbs, salt, pepper and breadcrumbs. Bind with stock or gravy.

2. Shape into a roll and wrap in greased greaseproof paper.

3. Place on a baking sheet and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 minutes.

4. Serve hot or cold, in slices.

5. Note: This is a good way to use up leftovers as the quantities can be easily varied.
