Cheese and Ham Aigrettes

ingredients

makes about 24
2 oz (50 g) choux pastry
75 g (1 oz) Cheddar cheese, grated
25 g (1 oz) cooked ham, chopped
1 teaspoon finely chopped onion
salt
cayenne pepper
oil for deep frying
grated cheese to serve

method

1. Mix the dough with the cheese, ham, onion, salt and cayenne until smooth.

2. Heat the oil to 180°C (350°F).

3. Drop small spoonsful of the mixture into the oil and deep fry for about 4 to 5 minutes or until golden brown.

4. Drain on paper towels and serve hot, sprinkled with grated cheese.
