ingredients

1.75 litres (3 pints) ale
2 baked apples
few cloves
sugar
grated nutmeg
ground ginger
3 eggs

method

1. Warm the ale in a saucepan.

2. Stick the apples with the cloves and add to the pan with sugar to taste and the spices.

3. Beat the eggs in a bowl until smooth.

4. Strain the hot but not boiling spiced ale on to the eggs and stir until a smooth, creamy mixture is obtained.

5. Drink hot.
