Apple Cake #2

ingredients

1 stick (8 Tbsp)4 oz (100 g) butter or margarine
1/2 cup (100 g) 4 oz caster sugar (superfine granulated)
2 eggs, beaten
1 1/2 cups (175 g) 6 oz self raising (self rising) flour
pinch of salt
pinch of ground cinnamon (optional)
2 or 3 tablespoons stewed or grated raw apple

method

1. Cream the fat with the sugar, then beat in the eggs.

2. Sift in the flour, salt and cinnamon, if used, and mix together.

3. Stir in the apple. If raw grated apple is used, a little water may be needed to make a dropping consistency.

4. Turn into a greased 18 cm (7 inch) cake tin and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 40 minutes.

5. Alternatively, the mixture may be baked in small bun tins or paper cases, in which case decrease the baking time to about 15 minutes.
