Brandy Whip

ingredients

serves 4
3/4 pint (400 ml) double cream (heavy cream)
scant 1/2 (us) cup (100 ml) brandy
juice of 1/2 lemon
caster sugar (superfine granulated) (optional)
ground nutmeg

method

1. In a large bowl, whip the cream to soft peaks, adding the brandy and the lemon juice gradually.

2. Taste, and add the caster sugar, if required.

3. Spoon the mixture into 4 individual glasses.

4. Sprinkle with a little nutmeg and chill before serving.

5. Serve with Sponge Fingers.
