Fritters Light Batter

ingredients

1 cup + 3 tbsp (125 g) plain flour (All purpose)
1 pinch of salt
1 tbsp (15 ml) oil
2/3 cup (150 ml) 1/4 pt water
2 egg whites

method

1. Mix together the flour and salt.

2. Make a well in the centre and add the oil and half the water.

3. Beat until smooth and add the remaining water gradually.

4. Just before using, whisk the egg whites stiffly and fold them into the batter.

5. Use immediately.
