1. Mix flour with salt and pepper and use to coat the chicken pieces.
2. Dip them in egg, then in a mixture of one part breadcrumbs to three parts cheese.
3. Brown under a preheated hot grill, then arrange in a baking dish.
4. Heat through in a preheated moderate oven 180°C (350°F) Gas Mark 4.
5. Garnish with grilled tomatoes and serve with cheese sauce.
