Tipsy Strawberries

ingredients

serves 4
1 lb (450 g) strawberries, hulled
2 tablespoons brandy
3 egg whites
2/3 cup (150 g) 5 oz caster sugar (superfine granulated)

method

1. Put the strawberries in an ovenproof serving dish. Sprinkle over the brandy.

2. Whisk the egg whites until stiff.

3. Whisk in half the sugar, then fold in the remainder.

4. Pile the meringue onto the strawberries.

5. Bake in a preheated moderately hot oven 200°C (400°F) Gas Mark 6 for 15 minutes.

6. Serve hot or cold with cream.
