Hot Prime Rib

ingredients

1 prime rib roast
1 cup (8-ounce jar) stone-ground mustard
1/4 cup balsamic vinegar
3 Tablespoons course ground pepper
1 Tablespoon salt

method

1. Mix together mustard, vinegar, salt, and pepper and rub onto meat, coating meat thickly.

2. Roast at 350°F (180°C) GAS MARK 4. for 15 minutes per pound (or a reading of 130°F (55°C) degrees on a meat thermometer). Let rest for 15 minutes
