Fish Rice Salad

ingredients

serves 4 - 5
3 oz (75 g) cooked rice
175 g (6 oz) cooked fish fillets, flaked
2 oz (50 g) raisins
salt pepper

for the dressing

2 tablespoons oil
1 tablespoon wine vinegar
1/2 garlic clove, crushed
dried tarragon

to garnish

tomato cucumber parsley

method

1. Mix together the ingredients for the dressing.

2. Add the rice, fish, raisins, salt and pepper and mix well.

3. Pile in the centre of a serving platter and garnish with tomato, cucumber and parsley.
