Guernsey Bean Jar

ingredients

serves 5 - 6
1 lb (450 g) small dried beans, soaked overnight
1 pig's trotter or piece of shin beef
1 onion chopped
parsley
salt
1 pint (600 ml) slightly thickened stock

method

1. Drain the beans and put into a saucepan with fresh cold water.

2. Bring to the boil and simmer until tender.

3. Drain again and tip into a stone jar or earthenware dish.

4. Add the remaining ingredients and cover tightly.

5. Bake in a preheated cool oven 140°C (275°F) Gas mark 1 for 4 to 5 hours.
