Egg Cutlets

ingredients

25 g (1 oz) margarine
3 tbls (25 g) 1 oz flour
2/3 cup (150 ml) 1/4 pt milk
1 egg yolk
1 tablespoon chopped cooked ham
3 hard-boiled eggs, chopped
1 teaspoon chopped parsley
4 mushrooms, chopped salt
pepper
1 egg, beaten
dry breadcrumbs for coating
oil for shallow frying
cooked macaroni to garnish

method

1. Melt the margarine in a saucepan and add the flour. Cook, stirring, for 2 minutes, then gradually stir in the milk. Cook, stirring, until thickened.

2. Remove from the heat and beat in the egg yolk, followed by the ham, hard-boiled eggs, parsley, mushrooms, salt and pepper.

3. Spread the mixture on a dampened plate and Shape the egg mixture into cutlets.

4. Dip in the beaten egg and coat in breadcrumbs.

5. Fry in shallow fat and serve hot, garnished with a few pieces of macaroni.
