4 oz (100 g) shortcrust pastry
2 oz (50 g) Parmesan cheese, grated
2 tbsp (25 g) 1 oz butter, melted
1 egg yolk
1. Roll out the dough and use to line small patty tins.
2. Mix together the cheese, butter, egg, egg yolk, salt and cayenne and divide between the patty tins.
3. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 25 minutes or until the egg mixture is set and the pastry is golden brown.
