Celery Stuffing

ingredients

enough to stuff a 3 to 4 kg (7 to 9 lb) bird
2 tbsp (25 g) 1 oz butter
4 celery stalks, finely chopped
4 oz (100 g) fresh breadcrumbs
salt and pepper
small onion, minced

method

1. Melt the butter in a pan and fry the celery until softened.

2. Remove from the heat and mix in the remaining ingredients.

3. Moisten with a little more melted butter, or bacon fat, if necessary.
