Chocolate Biscuits

ingredients

makes about 14
3 oz (75 g) margarine
1/4 cup (50 g) 2 oz soft brown sugar
1 tablespoon cocoa powder
pinch of salt
4 teaspoon vanilla essence
1 cup (100 g) 4 oz self raising (self rising) flour, sifted
25 g (1 oz) cornflakes, crushed
melted plain chocolate to ice
blanched almonds to decorate

method

1. Cream together the margarine and sugar.

2. Beat in the cocoa powder, salt and vanilla essence.

3. Gradually and alternately beat in the flour and cornflakes.

4. Knead well, then shape the mixture into rounds.

5. Place the rounds on a greased baking sheet and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for about 15 minutes.

6. Cool, then ice with melted chocolate and decorate each biscuit with a blanched almond.
