Fruit Fritters with Liqueur

ingredients

1 cup + 3 tbsp (125 g) plain flour (All purpose)
pinch of salt
1 egg
2/3 cup (150 ml) 1/4 pt milk or milk and water

for the fritters

several pieces of fruit (pineapple rings, apricot halves)
1 bottle of Kirsch or rum
a plate of caster sugar (superfine granulated)
a little ground cinnamon

method

to make the coating batter

1. Mix together the flour and salt.

2. Make a well in the centre and break in the egg.

3. Add half the liquid and beat the mixture until smooth.

4. Gradually add the rest of the liquid and beat until well mixed.

to make the fritters

1. Soak some pineapple rings in Kirsch or some apricot halves in rum before making into fritters.

2. Dip in coating batter and fry until golden in deep fat hot enough to brown a 2.5 cm (1-in) cube of bread in 60-70 seconds.

3. Drain on crumpled kitchen paper,

4. Toss in caster sugar and a little ground cinnamon and serve straight away.

5. If you prefer, fry fritters in shallow fat, turning each one once.
