Vinegar Cake

ingredients

2 cups (225 g) 8 oz self-raising flour
1/2 teaspoon salt
1/2 cup (100 g) 4 oz caster sugar (superfine granulated)
3 oz (75 g) margarine
2 oz (50 g) currants
2 oz (50 g) raisins
25 g (1 oz) chopped mixed peel
1 tablespoon vinegar
9 tablespoons milk

method

1. Sift the flour, salt and sugar into a bowl.

2. Rub in the margarine, then mix in the dried fruit and peel.

3. Mix to a dropping consistency with the vinegar and milk.

4. Turn into a greased 18 cm (7 inch) cake tin.

5. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for about 1 1/2 hours.
